Trying to lose weight and still eat well - The perfect diet

We start with a real "classic" of the Spanish kitchen: the Gazpacho. A cold vegetable soup, well known all over the world. And we will add a very special "little something"...

GAZPACHO with Passion-Fruit ice cubes (for 4 people)

gazpacho1 large red pepper; 8-10 Cherry Tomatoes - really ripe; 150gr pealed cucumber; 2 spoons coriander, finely grinded; a pinch cumin seed; 1 spoon red Tabasco; 4 spoons chicken-chilli sauce; 90 ml vegetable oil; 50 ml virgin Olive oil

Put all the ingredients in a blender and mix them really well, until you have a smooth liquid. Afterwards strain it through a fine sieve and put it in the fridge.

Passion-Fruit ice cubes

4 spoons of white cane-sugar; 100ml passion-fruit juice

Dissolve the sugar with 4 spoons of the juice in a pot at low heat. Afterwards mix it with the rest of the juice and fill it in a tray for ice cubes. Freeze it over night.

Service:

Put the frozen cubes in a glass and pour the Gazpacho over it. Or serve the ice cubes separate.

Gazpacho with Passion-Fruit ice cubes is an ideal starter for any meal during the summer. It is low in calories, so if you are trying to lose weight - it is just perfect! And it is easy to prepare and can be done in advance.
